Description

Juicy roasted chicken legs seasoned with mild garlic and herbs, baked until crispy on the outside and tender inside. A comforting, kid-friendly dinner made with simple pantry ingredients.


Ingredients

4 chicken legs

2 tbsp olive oil

4 cloves garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

1 tsp salt

1/2 tsp black pepper

1 tsp paprika


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, black pepper, and paprika.
  3. Coat the chicken legs evenly with the seasoning mixture.
  4. Arrange the chicken legs on the prepared baking sheet.
  5. Roast for 35–40 minutes until the skin is golden and the internal temperature reaches 165°F (74°C).
  6. Remove from the oven and let rest for 5 minutes before serving.

Notes

For crispier skin, place the chicken on a rack over the baking sheet.

Fresh herbs can be used in place of dried.

Letting the chicken rest helps retain juices.

Leftovers keep well in the refrigerator for up to 3 days.
