Description

A quick and fluffy air fryer breakfast frittata made with eggs, turkey sausage, cheese, and vegetables for a warm, protein-packed start to the day.


Ingredients

Cooking spray

¼ pound cooked turkey breakfast sausage, crumbled

4 large eggs, lightly beaten

½ cup shredded Cheddar–Monterey Jack cheese blend

2 tablespoons red bell pepper, diced

1 green onion, chopped

1 pinch cayenne pepper (optional)


Instructions

  1. Preheat the air fryer to 360°F (180°C). Spray a nonstick 6×2-inch cake pan with cooking spray.
  2. In a large bowl, combine the turkey sausage, beaten eggs, shredded cheese, red bell pepper, green onion, and cayenne pepper if using.
  3. Mix until all ingredients are evenly combined.
  4. Pour the egg mixture into the prepared cake pan and gently tap the pan to level the mixture.
  5. Place the pan into the air fryer basket and cook for 18–20 minutes, until the center is set and the top is lightly golden.
  6. Carefully remove the pan from the air fryer and let the frittata cool slightly before slicing and serving.

Notes

Use a cake pan that fits comfortably in your air fryer basket.

You can customize this recipe with additional vegetables like spinach or mushrooms.

For a spicier version, add extra cayenne or chili flakes.

Line the pan with parchment paper for easier removal if desired.
