Description

These Air Fryer Scotch Eggs feature a golden, crispy breadcrumb coating with a juicy sausage layer surrounding a perfectly soft-boiled egg. A delicious and healthier twist on the classic snack.


Ingredients

6 large eggs

1 pound sausage meat ( chicken, or plant-based)

1 cup breadcrumbs (Panko recommended)

1 teaspoon mustard powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

2 tablespoons fresh parsley (chopped)

Olive oil spray (for coating)


Instructions

  1. Place 6 large eggs in a pot of water. Bring to a boil, then simmer for 6-7 minutes for soft-boiled eggs. Transfer to an ice bath to stop the cooking process. Let cool, then peel.
  2. In a bowl, mix sausage meat with mustard powder, garlic powder, onion powder, salt, black pepper, paprika, and chopped parsley until well blended.
  3. Divide the sausage mixture into 6 portions. Flatten each portion into a disk and wrap it around each egg, ensuring there are no gaps.
  4. Roll the sausage-wrapped eggs in breadcrumbs, pressing gently to coat evenly.
  5. Preheat your air fryer to 375°F (190°C) for 5 minutes.
  6. Lightly spray the coated eggs with olive oil. Place them in the air fryer basket in a single layer, and cook for 12-15 minutes until golden and crispy. Flip halfway through if desired.
  7. Carefully remove the eggs from the air fryer and let them cool slightly.
  8. Slice in half to reveal the perfectly cooked egg and serve!

For a vegetarian version, use plant-based sausage substitute.
