Description

Amatriciana is a traditional Italian pasta dish featuring a savory blend of chicken, stewed tomatoes, and crushed red pepper flakes. This simple yet flavorful meal is served with linguine pasta and garnished with fresh basil or parsley, offering a comforting dish that’s ready in under 40 minutes.


Ingredients

4 slices of chicken breast or thigh, diced

½ cup chopped onion

1 teaspoon minced garlic

¼ teaspoon crushed red pepper flakes

2 (14.5 ounce) cans stewed tomatoes, undrained

1 pound linguine pasta, uncooked

1 tablespoon chopped fresh basil (or flat-leaf parsley)

2 tablespoons grated Parmesan cheese


Instructions

  1. Cook diced chicken in a large saucepan over medium-high heat until fully cooked and slightly crispy, about 5 minutes. Drain excess fat.
  2. Add chopped onions to the pan and cook over medium heat for 3 minutes, until softened.
  3. Stir in garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  4. Add undrained stewed tomatoes and simmer for 10 minutes, breaking up the tomatoes with a spoon as they cook.
  5. While sauce is simmering, cook linguine in a large pot of salted boiling water until al dente. Drain pasta.
  6. Stir chopped basil (or parsley) into the sauce.
  7. Toss the cooked pasta with the sauce and serve immediately, garnished with grated Parmesan cheese.

Notes

Substitute linguine with spaghetti, fettuccine, or bucatini for a different texture.

For a meatless version, omit the chicken and sauté onions and garlic in olive oil.

Adjust the amount of crushed red pepper flakes for a spicier sauce.

Add extra veggies like spinach or mushrooms for added flavor and nutrition.
