These Baked Garlic Parmesan Potato Wedges are crispy on the outside, tender on the inside, and packed with flavor from garlic, Parmesan, and Italian herbs. They make the perfect easy side dish or snack for any occasion.
Ingredients
4 Russet potatoes, sliced into wedges
1 1/2 tbsp Italian seasoning
Salt and pepper, to taste
4 tbsp olive oil
2 tsp garlic powder
1/2 cup shredded Parmesan cheese
Ranch dressing or ketchup, for serving (optional)
Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a large baking sheet.
- In a large bowl, combine potato wedges, olive oil, garlic powder, Italian seasoning, salt, pepper, and Parmesan cheese. Toss until evenly coated.
- Arrange wedges in a single layer on the baking sheet, making sure they do not overlap for even crisping.
- Bake for 25–35 minutes, flipping halfway through, until golden brown and tender when pierced with a fork.
- Transfer wedges to a serving platter, sprinkle with chopped parsley, and serve hot with ranch dressing or ketchup.
Notes
For extra crispiness, soak wedges in cold water for 30 minutes, then pat dry before seasoning.
Add smoked paprika or chili powder for a spicier version.
Swap Italian seasoning for fresh rosemary or thyme for a rustic flavor.
Use shredded mozzarella mixed with Parmesan for a cheesier result.
Reheat leftovers in the oven at 375°F for 10 minutes to restore crispness.
