Description

A hearty beef enchilada casserole made with layers of flour tortillas, seasoned ground beef, enchilada sauce, and melted cheese. This easy, comforting dish is perfect for a weeknight dinner and can be customized with different toppings or add-ins.


Ingredients

1 pound ground beef

1/2 cup diced onion

1 (1 oz) package taco seasoning

1/4 cup water

1 cup red enchilada sauce

6 (8-inch) flour tortillas

2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef and onion until the beef is no longer pink.
  3. Stir in taco seasoning and water. Simmer for about 5 minutes until most of the liquid is absorbed.
  4. Spread a thin layer of enchilada sauce on the bottom of the prepared dish.
  5. Tear two tortillas into large pieces and layer them over the sauce.
  6. Add half the beef mixture, one-third of the remaining sauce, and one-third of the cheese.
  7. Repeat the layers once more.
  8. For the final layer, use the last two tortillas, the remaining sauce, and the rest of the cheese.
  9. Cover with foil and bake for 25–30 minutes.
  10. Remove foil and bake for an additional 5–10 minutes, until the cheese is melted and bubbly.
  11. Let stand for a few minutes before serving.

Notes

Add black beans, corn, or vegetables for more texture and flavor.

Use ground turkey or chicken as a leaner alternative to beef.

Swap cheddar for a Mexican cheese blend for a different flavor.

Lightly toast tortillas before layering to prevent sogginess.

Assemble ahead of time and refrigerate before baking.

Freeze the casserole before baking for up to 2 months.
