Description
A hearty beef enchilada casserole made with layers of flour tortillas, seasoned ground beef, enchilada sauce, and melted cheese. This easy, comforting dish is perfect for a weeknight dinner and can be customized with different toppings or add-ins.
Ingredients
1 pound ground beef
1/2 cup diced onion
1 (1 oz) package taco seasoning
1/4 cup water
1 cup red enchilada sauce
6 (8-inch) flour tortillas
2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
- In a large skillet over medium heat, brown the ground beef and onion until the beef is no longer pink.
- Stir in taco seasoning and water. Simmer for about 5 minutes until most of the liquid is absorbed.
- Spread a thin layer of enchilada sauce on the bottom of the prepared dish.
- Tear two tortillas into large pieces and layer them over the sauce.
- Add half the beef mixture, one-third of the remaining sauce, and one-third of the cheese.
- Repeat the layers once more.
- For the final layer, use the last two tortillas, the remaining sauce, and the rest of the cheese.
- Cover with foil and bake for 25–30 minutes.
- Remove foil and bake for an additional 5–10 minutes, until the cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
Add black beans, corn, or vegetables for more texture and flavor.
Use ground turkey or chicken as a leaner alternative to beef.
Swap cheddar for a Mexican cheese blend for a different flavor.
Lightly toast tortillas before layering to prevent sogginess.
Assemble ahead of time and refrigerate before baking.
Freeze the casserole before baking for up to 2 months.
