Description

Brown Rice and Black Bean Casserole is a hearty, flavorful dish combining brown rice, black beans, chicken, cheese, and vegetables. It’s a comforting, nutritious meal that’s easy to prepare and perfect for family dinners or gatherings.


Ingredients

⅓ cup brown rice

1 cup vegetable broth

1 tablespoon olive oil

⅓ cup diced onion

1 medium zucchini, thinly sliced

2 cooked skinless boneless chicken breast halves, chopped

½ cup sliced mushrooms

½ teaspoon cumin

Salt to taste

Ground cayenne pepper to taste

1 (15 ounce) can black beans, drained

1 (4 ounce) can diced green chile peppers, drained

⅓ cup shredded carrots

2 cups shredded Swiss cheese


Instructions

  1. In a pot, mix brown rice and vegetable broth. Bring to a boil, reduce heat, cover, and simmer for 45 minutes or until the rice is tender.
  2. Preheat the oven to 350°F (175°C). Lightly grease a large casserole dish.
  3. Heat olive oil in a skillet over medium heat. Cook diced onion until tender. Add zucchini, chicken, and mushrooms, seasoning with cumin, salt, and cayenne. Cook until zucchini is browned and chicken is heated through.
  4. In a large bowl, combine cooked rice, sautéed vegetables, black beans, green chiles, shredded carrots, and half of the shredded Swiss cheese. Stir to combine.
  5. Transfer the mixture to the casserole dish, topping with the remaining Swiss cheese.
  6. Cover loosely with foil and bake for 30 minutes. Remove foil and bake for another 10 minutes until bubbly and lightly browned.

Notes

For a vegetarian version, skip the chicken and add more vegetables like bell peppers or spinach.

Try using white rice or quinoa instead of brown rice for a different texture.

Feel free to swap the Swiss cheese with cheddar or pepper jack for a different cheese flavor.

Rotisserie chicken can be used as a time-saving alternative to cooking fresh chicken breasts.
