Ingredients
⅓ cup brown rice
1 cup vegetable broth
1 tablespoon olive oil
⅓ cup diced onion
1 medium zucchini, thinly sliced
2 cooked skinless boneless chicken breast halves, chopped
½ cup sliced mushrooms
½ teaspoon cumin
Salt to taste
Ground cayenne pepper to taste
1 (15 ounce) can black beans, drained
1 (4 ounce) can diced green chile peppers, drained
⅓ cup shredded carrots
2 cups shredded Swiss cheese
Instructions
- In a pot, mix brown rice and vegetable broth. Bring to a boil, reduce heat, cover, and simmer for 45 minutes or until the rice is tender.
- Preheat the oven to 350°F (175°C). Lightly grease a large casserole dish.
- Heat olive oil in a skillet over medium heat. Cook diced onion until tender. Add zucchini, chicken, and mushrooms, seasoning with cumin, salt, and cayenne. Cook until zucchini is browned and chicken is heated through.
- In a large bowl, combine cooked rice, sautéed vegetables, black beans, green chiles, shredded carrots, and half of the shredded Swiss cheese. Stir to combine.
- Transfer the mixture to the casserole dish, topping with the remaining Swiss cheese.
- Cover loosely with foil and bake for 30 minutes. Remove foil and bake for another 10 minutes until bubbly and lightly browned.
Notes
For a vegetarian version, skip the chicken and add more vegetables like bell peppers or spinach.
Try using white rice or quinoa instead of brown rice for a different texture.
Feel free to swap the Swiss cheese with cheddar or pepper jack for a different cheese flavor.
Rotisserie chicken can be used as a time-saving alternative to cooking fresh chicken breasts.
