Eggs and Broth
- 6 large eggs
- 4 cups water
- 2 tablespoons Cajun seasoning

- 4 cloves garlic, minced

- 1/2 teaspoon red pepper flakes
- 2 green onions, chopped
Instructions
- Boil the eggs: Bring 4 cups of water to a boil in a pot. Add the Cajun seasoning, salt, and black pepper and stir well to flavor the water. Carefully place the 6 large eggs into the boiling water and let them cook for 10 minutes to achieve a hard-boiled texture.
- Cool the eggs: Remove the eggs from the boiling water and immediately place them in a bowl of ice water to cool down and stop the cooking process. This also makes peeling easier.
- Prepare the spicy garlic broth: While the eggs cool, heat 1 tablespoon of olive oil in a separate pan over medium heat. Add the minced garlic and red pepper flakes and sauté them until fragrant, about 1-2 minutes. Then, pour in the seasoned boiling water broth from the pot and bring it to a simmer.
- Peel and marinate: Peel the cooled eggs and gently place them into the simmering spicy garlic broth. Let the eggs marinate in the broth for a few minutes to absorb the flavors.
- Garnish and serve: Transfer the eggs with some broth to serving bowls and garnish with freshly chopped green onions. Serve warm as a flavorful Cajun-inspired appetizer.
