Ingredients
2 large yellow onions, diced
4 garlic cloves, minced
1-inch fresh ginger root, grated
2 cups diced tomatoes (fresh or canned)

2 tablespoons curry powder
2 cups mixed vegetables (carrots, bell peppers, peas)

Instructions
- Prepare ingredients: chop onions, mince garlic, grate ginger, and dice tomatoes.
