Ingredients

For the Seafood Filling:

1 lb shrimp, peeled and deveined

1 lb crab meat (or imitation crab)

1 cup fish fillets (cod or haddock), cut into chunks

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup heavy cream

2 cups chicken or seafood broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

For the Biscuit Topping:

1 package of Cheddar Bay Biscuit mix (includes cheddar cheese & seasoning)

¾ cup milk (for biscuit mix)

¼ cup melted butter (for biscuit topping)


Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C).
  2. Cook seafood: In a large pot, cook shrimp, crab, and fish for 3–4 minutes until shrimp turn pink. Remove and set aside.
  3. Make the sauce: Add broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper to the pot. Stir and bring to a simmer.
  4. Add vegetables and seafood: Add the frozen vegetables and cooked seafood, simmer for about 5 minutes until heated through.
  5. Thicken the sauce: Simmer for another 5 minutes until the sauce thickens. Remove from heat.
  6. Prepare the biscuits: In a bowl, combine the Cheddar Bay Biscuit mix with milk. Stir until just combined.
  7. Assemble the pot pie: Pour the seafood mixture into a large baking dish. Drop spoonfuls of biscuit dough over the top.
  8. Add melted butter: Drizzle melted butter over the biscuit topping.
  9. Bake: Bake for 25–30 minutes or until the biscuits are golden brown and the filling is bubbling.
  10. Cool and serve: Let the pot pie cool for 5–10 minutes before serving.

Notes

Add shredded cheese to the biscuit topping for extra cheesiness.

For a spicier version, add Old Bay seasoning or crushed red pepper flakes to the filling.
