Description

Cheese fatayer are flaky Middle Eastern pastries made with puff pastry and filled with a creamy, tangy blend of feta, ricotta, and parsley. Golden and cheesy, they’re perfect as a snack, appetizer, or part of a mezze spread.


Ingredients

1 sheet puff pastry, thawed

1 cup crumbled feta cheese

1 cup ricotta cheese

1/4 cup fresh parsley, finely chopped

1 egg yolk (for brushing)

Salt and pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry on a lightly floured surface until about 1/8 inch thick. Cut into circles with a large cutter.
  3. Mix feta, ricotta, parsley, salt, and pepper in a bowl until well combined.
  4. Place 1 tbsp filling onto each pastry circle. Fold in half and press edges firmly to seal.
  5. Arrange on baking sheet and brush tops with egg yolk.
  6. Bake for 20–25 minutes, until golden and puffed. Cool slightly before serving.

Notes

Add mozzarella for extra gooey filling.

Swap parsley with mint or dill for variation.

Add chili flakes for a spicy version.

Sprinkle sesame or nigella seeds on top for richness.

Freeze unbaked fatayer and bake straight from frozen.
