Description

This Cheese, Herb & Garlic Quick Bread is a savory, no-yeast loaf packed with fresh herbs, rich cheese, and aromatic garlic. Moist, flavorful, and ready in just over an hour, perfect with soups, salads, or as a snack.


Ingredients

Cheese (cheddar, Colby, or tasty cheese)

Fresh rosemary

Fresh parsley leaves

Dried oregano

Dried thyme

Garlic cloves, crushed or grated

Extra virgin olive oil

Cooking salt or kosher salt

Plain flour (all-purpose)

Baking soda (or baking powder substitute)

Plain yogurt (Greek or regular, unsweetened)

Full-fat milk

Large eggs

Unsalted butter, melted

Olive oil


Instructions

  1. Preheat oven to 350°F (180°C). Grease and line a loaf pan with parchment paper.
  2. Mix rosemary, parsley, oregano, thyme, garlic, olive oil, and salt in a small bowl.
  3. Whisk flour, baking soda, and salt in a medium bowl.
  4. Whisk yogurt, milk, eggs, melted butter, olive oil, and additional garlic in a separate bowl until smooth.
  5. Add wet ingredients to dry and stir gently until just combined. Do not overmix.
  6. Layer batter in pan: pour one-third, add one-third herb mixture, swirl, insert one-third cheese slices. Repeat two more times.
  7. Bake 30 minutes. Cover with foil and bake an additional 20 minutes until golden and a skewer comes out clean.
  8. Cool in pan for 5 minutes, transfer to wire rack, cool at least 10 minutes before slicing.

Notes

Use shredded cheese instead of slices for even distribution.

Swap herbs for basil, chives, or dill.

Replace herb mixture with 1/3–1/2 cup pesto for a bold twist.

Add chili flakes for spice.

Try different cheeses like Gouda or pepper jack.

Store in airtight container at room temperature for up to 4 days, refrigerate for longer freshness, freeze for up to 2 months.
