Description

Golden, crispy on the outside, and filled with gooey mozzarella cheese inside. Cheesy Mozzarella Stuffed Potato Croquettes are perfect as an appetizer, snack, or side dish for any meal.


Ingredients

1 lb russet potatoes

1 large egg yolk

½ cup fresh parsley, chopped

¼ cup parmesan cheese, finely grated

5 oz mozzarella cheese, diced into ¼” cubes

2 large eggs

1 cup breadcrumbs

Sea salt and black pepper, to taste

Vegetable oil, for frying

Optional for Serving: Marinara Sauce, Garlic Aioli, and/or Sour Cream


Instructions

  1. Place unpeeled potatoes in a large pot, cover with cold water, season generously with salt, and bring to a boil. Cook until fork-tender, about 25–35 minutes.
  2. Drain and cool slightly. Peel the potatoes and pass through a ricer into a large mixing bowl, or mash with a potato masher.
  3. Add the egg yolk, fresh parsley, parmesan, and diced mozzarella. Mix thoroughly.
  4. Shape the mixture into 8 oval croquettes and place on a parchment-lined baking sheet. Refrigerate for 30 minutes.
  5. Heat 1 inch of vegetable oil in a medium saucepan to 350°F.
  6. Prepare a breading station: beat two eggs in a shallow dish, place breadcrumbs in another, and season both with salt and pepper.
  7. Roll each croquette in the beaten eggs, letting excess drip off, then dredge in breadcrumbs, pressing lightly to adhere.
  8. Fry croquettes in batches in hot oil until golden-brown and crispy, about 3–4 minutes. Do not overcrowd the pan.
  9. Remove croquettes and drain on paper towels. Serve immediately with desired dipping sauces.

Notes

Mix in chopped herbs like chives or thyme for extra flavor.

Use smoked mozzarella or pepper jack for a twist on the filling.

Bake instead of frying for a lighter, crispy option.

Store leftover croquettes in an airtight container in the fridge for up to 2 days.

Reheat in an oven at 375°F for 10–15 minutes to maintain crispiness.
