Ingredients
For the Chicken:
- 2 cups chunky salsa
- ¼ cup fajita seasoning
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large sweet onion, sliced
- 2 pounds boneless skinless chicken breasts (about 3-4 breasts)
For Serving:
- 8 flour tortillas
- 2 cups shredded Mexican blend cheese
- Guacamole (to taste)
- ½ cup sour cream
- Fresh cilantro (for garnish)
- Sliced lime (for serving)
Instructions
- Prepare the slow cooker base: In the basin of your slow cooker, add 2 cups of chunky salsa and ¼ cup fajita seasoning. Stir well until the seasoning is evenly mixed with the salsa.
- Add vegetables: Add the sliced red, green, and yellow bell peppers along with the sliced large sweet onion into the slow cooker. Toss gently to coat all the vegetables well with the salsa mixture.
- Place the chicken: Nestle the 2 pounds of boneless skinless chicken breasts into the crockpot, placing them under the coated peppers and onions. Spoon some of the sauce and vegetable mixture over the chicken breasts to cover them evenly.
- Slow cook the chicken: Cover the crockpot and cook on HIGH for 3 hours or LOW for 6 hours until the chicken is fully cooked and tender.
- Shred or cube the chicken: Remove the chicken breasts from the crockpot or shred them directly using two forks until the meat is shredded or cut into cubes according to your preference.
- Assemble the wraps: Lay out the flour tortillas and distribute the chicken fajita filling evenly on each. Top with shredded Mexican blend cheese and a spoonful of guacamole.
- Finish and serve: Roll the tortillas tightly to form wraps. Serve warm with sour cream, fresh cilantro, and lime wedges on the side for squeezing over the wraps.
Notes
- You can adjust the fajita seasoning amount to taste if you prefer a milder or spicier flavor.
- Use flour tortillas or swap for gluten-free tortillas if needed.
- Leftover filling can be refrigerated and used for sandwiches or salads.
- For extra zest, add a squeeze of fresh lime juice directly inside the wraps before rolling.
- Shredding the chicken inside the crockpot saves cleanup time and keeps the meat juicy.
