Ingredients

Base Mixture

  • ½ cup Peanut Butter
  • 3 tablespoons Soft Butter
  • 1 teaspoon Vanilla Extract
  • 1 cup Rice Krispies
  • ½ cup Chopped Pecans
  • 1 cup Shredded Coconut

Chocolate Coating

  • 1 package Chocolate Chips (approximately 10-12 ounces)
  • 1 square Sweet Chocolate (about 1 oz)


Instructions

  1. Mix Ingredients: In a large mixing bowl, combine the peanut butter, soft butter, and vanilla extract until smooth. Add the Rice Krispies, chopped pecans, and shredded coconut, folding everything together until well incorporated.
  2. Chill Mixture: Place the mixture into the refrigerator and chill for at least 30 minutes to firm up, making it easier to handle and shape.
  3. Form Balls: Once chilled, shape the mixture into small balls, about 1 to 1.5 inches in diameter, using your hands or a small scoop.
  4. Second Chill: Arrange the formed balls on a tray and return them to the fridge for at least 1 hour to set fully and become firm.
  5. Melt Chocolate: Prepare a double boiler by placing a heatproof bowl over a pot of simmering water. Add the chocolate chips and sweet chocolate to the bowl and stir occasionally, keeping the heat low until the chocolate is fully melted and smooth.
  6. Coat Balls: Using a fork, dip each chilled ball into the melted chocolate, making sure to coat it completely. Lift with the fork and let excess chocolate drip off before placing it back onto parchment paper.
