Ingredients

1 lb ground beef

1 small onion, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10.5 oz) condensed cream of mushroom soup

1 cup shredded cheddar cheese

1/2 cup milk

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

1 package (28 oz) frozen tater tots


Instructions

  • Preheat the Oven
    Preheat your oven to 375°F (190°C).

  • Cook the Ground Beef
    In a large skillet, cook the ground beef and diced onion over medium heat for 5-7 minutes until browned and the onion is tender. Drain excess fat.

  • Add the Ingredients
    Stir in the black beans, corn, cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.

  • Assemble the Casserole
    Transfer the beef mixture into a 9×13-inch baking dish, spreading evenly. Sprinkle shredded cheddar cheese over the top.

  • Add the Tater Tots
    Arrange the frozen tater tots in a single layer on top of the casserole.

  • Bake
    Bake the casserole for 35-40 minutes, or until the tater tots are golden brown and the casserole is bubbling.
