Ingredients
2 cups pumpkin puree
1 onion, chopped
2 cloves garlic, minced
3 cups vegetable broth
1 cup heavy cream
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground nutmeg
Instructions
- Heat the olive oil in a pot over medium heat.
- Add the chopped onion and garlic and sauté until soft and fragrant.
- Stir in the pumpkin puree and vegetable broth.
- Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
- Blend the soup until completely smooth using an immersion or countertop blender.
- Stir in the heavy cream, salt, pepper, and nutmeg.
- Simmer for an additional 5 minutes.
- Serve warm.
Notes
Use coconut milk instead of cream for a dairy-free version.
Add a pinch of cinnamon or smoked paprika for extra warmth.
If the soup thickens too much, add a splash of broth.
