Ingredients
1 tbsp olive oil
1 lb Italian sausage (mild or spicy), casing removed
1 small onion, diced
3–4 cloves garlic, minced
1 tsp dried Italian seasoning
1/2 tsp paprika (optional)
1/4 tsp crushed red pepper flakes (optional)
4 cups chicken broth
1 cup heavy cream
1 package (20 oz) cheese ravioli (fresh or frozen)
1/2 cup sun-dried tomatoes, drained and chopped
3 cups baby spinach
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a large Dutch oven or soup pot over medium heat.
- Add the Italian sausage, breaking it up with a spoon, and cook until browned, about 5–7 minutes.
- Stir in diced onion and cook for 2–3 minutes until softened.
- Add minced garlic, Italian seasoning, paprika, and red pepper flakes; cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a gentle boil.
- Reduce heat and stir in heavy cream; simmer uncovered for 5–7 minutes.
- Add cheese ravioli and sun-dried tomatoes; simmer 5–6 minutes or until ravioli are tender.
- Turn off the heat and stir in baby spinach until wilted.
- Mix in grated Parmesan cheese until melted and creamy.
- Season with salt and pepper to taste, garnish with fresh basil or parsley, and serve hot.
Notes
Use frozen ravioli; add 2 extra minutes to the cooking time.
Substitute half-and-half for a lighter version.
Swap sausage for rotisserie chicken or plant-based sausage.
Add kale instead of spinach for a heartier texture.
For extra creaminess, stir in more Parmesan or mozzarella before serving.
