Perfect for parties, Mexican dinner nights, or casual snacking, this dip is easy to prepare in a slow cooker requiring minimal effort and delivering a rich, savory taste served warm with tortilla chips or fresh vegetables.
Ingredients
Meat and Vegetables
- 1 pound ground beef
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
Dairy
- 1 pound Velveeta cheese, cubed
Canned Goods
- 2 cans Rotel tomatoes with green chiles, undrained
Spices and Garnish
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Fresh cilantro or parsley, chopped (optional, for garnish)
Instructions
- Prepare the Slow Cooker: Lightly coat the inside of the crockpot with cooking spray to prevent sticking during cooking.
- Cook Ground Beef and Onion: In a medium skillet over medium heat, cook the ground beef and finely chopped onion until the beef is browned and the onion becomes softened. Drain off any excess grease carefully to avoid a greasy dip.
- Add Garlic and Transfer: Add the minced garlic to the skillet and cook for about 1 minute to release its aroma. Then transfer the entire beef mixture into the slow cooker.
- Add Cheese and Tomatoes: Add the cubed Velveeta cheese and the undrained cans of Rotel tomatoes with green chiles directly into the slow cooker with the meat mixture.
- Season the Dip: Sprinkle in chili powder, onion powder, and garlic powder evenly over the ingredients in the crockpot.
- Cook the Dip: Stir all the ingredients gently to combine. Cover and cook on the Low setting for 2 to 3 hours or on High for about 1 hour. Stir occasionally to ensure cheese melts evenly and the dip becomes smooth.
- Finish and Serve: Stir the dip well before serving. Garnish with chopped fresh cilantro or parsley if desired. Serve warm with tortilla chips, crackers, or fresh vegetables for dipping.
Notes
- You can make this Rotel dip on the stovetop as an alternative to using a crockpot if desired.
- Avoid freezing leftovers to maintain the dip’s creamy texture and optimal flavor.
- Drain the excess grease thoroughly after cooking the ground beef to prevent a greasy texture and taste in the finished dip.
