Description

Easy crockpot salsa chicken made with tender shredded chicken simmered in salsa and taco seasoning for a bold, versatile, set-and-forget meal.


Ingredients

2 lb boneless, skinless chicken breasts or thighs

2 tbsp taco seasoning

2 cups salsa


Instructions

  1. Place the chicken in the bottom of the crockpot in a single layer.
  2. Sprinkle taco seasoning evenly over the chicken.
  3. Pour the salsa over the top, spreading it to fully cover the chicken.
  4. Cover and cook on low for 4–6 hours, or until the chicken is very tender.
  5. Shred the chicken directly in the crockpot using two forks.
  6. Stir well so the shredded chicken is fully coated in the sauce.
  7. Serve warm as desired.

Notes

Chicken is done when it shreds easily and reaches 165°F internally.

Salsa heat level can be adjusted to taste.

Great for tacos, burrito bowls, salads, and wraps.

Can be doubled for meal prep or larger families.
