Ingredients

For the Duck Fried Rice

  • 1 ½ teaspoons sesame oil
  • 1 cup diced duck breast
  • 5 tablespoons soy sauce, divided
  • 4 tablespoons butter, divided
  • 2 teaspoons fresh lemon juice
  • Salt to taste
  • Freshly ground black pepper to taste
  • ½ cup diced white onion
  • 1 cup frozen mixed vegetables
  • 2 large eggs
  • 4 cups cooked white rice, completely cooled

Instructions

  1. Heat the wok: Place a large wok or skillet over medium-high heat. When the wok is warm, add sesame oil and swirl to coat the bottom. Continue heating until the oil is hot and shimmering.
  2. Cook duck breast: Add diced duck breast to the hot oil and cook undisturbed for 2 minutes to develop a sear.
  3. Season duck: Add 2 tablespoons of soy sauce, 1 tablespoon of butter, lemon juice, salt, and black pepper. Stir to combine and cook, stirring occasionally, until the duck is cooked through, about 5 to 7 minutes. Use a meat thermometer to confirm internal temperature reaches approximately 130° Fahrenheit.
  4. Sauté vegetables: Add diced onions and frozen mixed vegetables to the wok. Stir occasionally and cook until onions are translucent, about 3 minutes.
  5. Scramble eggs: Push duck and vegetables to the side of the wok. Crack eggs into the empty space and scramble with a spatula until fully cooked.
  6. Add rice and butter: Incorporate the cooked rice and remaining 3 tablespoons butter. Stir and fold the ingredients together, cooking for about 5 minutes while stirring frequently to prevent sticking or burning.
  7. Season rice: Pour in the remaining 3 tablespoons soy sauce. Stir well and cook for approximately 1 more minute until the rice is heated through, stirring occasionally.
  8. Serve: Divide the duck fried rice evenly into serving bowls. Garnish with sesame seeds and sliced green onions if desired. Serve warm.
