Ingredients

8 Tbsp (1 stick) unsalted butter, room temperature

2 garlic cloves, finely minced

1 1/2 Tbsp fresh parsley, finely chopped

1 tsp lemon juice

1/4 tsp salt

1/8 tsp black pepper

For the Chicken:

4 boneless, skinless chicken breasts

1 tsp salt

1/4 tsp black pepper

1/2 cup all-purpose flour

2 large eggs

1 cup plain breadcrumbs

Avocado oil or neutral oil for frying


Instructions

  • Make the Garlic Herb Butter:

    • Combine butter, minced garlic, parsley, lemon juice, salt, and pepper in a small bowl. Stir until evenly mixed. Shape the butter into a log using plastic wrap and freeze for 30 minutes.

  • Prep the Chicken:

    • Place chicken breasts between plastic wrap or parchment paper and pound to 1/4-inch thickness. Season both sides with salt and pepper.

  • Assemble the Kiev:

    • Slice the chilled garlic herb butter into four pieces. Place a piece of butter in the center of each chicken breast. Roll the chicken tightly around the butter, tucking in the ends. Refrigerate for at least 30 minutes.

  • Coat and Bread the Chicken:

    • Prepare a breading station: one plate with flour, one with beaten eggs, and one with breadcrumbs. Roll each chicken roll in flour, dip in eggs, then coat in breadcrumbs, pressing gently to adhere.

  • Fry to Golden Perfection:

    • Heat oil in a skillet over medium heat. Fry the chicken rolls seam-side down for 3-4 minutes per side until golden brown.

  • Finish in the Oven:
