Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Sauté the Vegetables: Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing them for about 3-4 minutes until softened and fragrant.
- Cook the Turkey: Add the ground turkey to the skillet. Break it apart with a wooden spoon and cook for 5-7 minutes until fully browned and cooked through.
- Season the Mixture: Stir in the Italian seasoning, salt, and black pepper. Mix well to combine all the flavors evenly.
- Layer the Casserole: Grease a 9×13-inch baking dish. Spread half of the sliced zucchini evenly on the bottom of the dish. Next, layer the cooked turkey mixture over the zucchini, then pour half of the marinara sauce over the turkey.
- Add Cheese: Sprinkle half of the shredded mozzarella cheese and half of the grated Parmesan cheese evenly over the marinara sauce layer.
- Finish Layering: Add the remaining zucchini slices on top of the cheeses, then pour the remaining marinara sauce evenly over the zucchini. Finally, sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake: Cover the casserole dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for another 10-15 minutes, or until the cheese is bubbly and golden brown.
