Garlic Parmesan Chicken Meatloaf is a healthier twist on classic meatloaf, made with lean ground chicken, savory parmesan, and a cheesy kick, topped with marinara and melted mozzarella for a flavorful, guilt-free comfort food.
Ingredients
2 lbs ground chicken
1 cup grated Parmesan cheese
3/4 cup breadcrumbs (gluten-free if needed)
1/2 cup whole milk
2 large eggs
3 cloves garlic, minced
1 small onion, finely chopped
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup marinara sauce, plus more for topping
1 cup shredded mozzarella cheese (optional for topping)
Fresh parsley, chopped (optional garnish)
Instructions
- Preheat the oven to 375°F (190°C) and grease a loaf pan or line a sheet pan with parchment paper.
- In a small bowl, soak breadcrumbs in milk for 2–3 minutes until soft and mushy.
- In a large mixing bowl, combine ground chicken, parmesan, eggs, garlic, onion, Italian seasoning, salt, pepper, and soaked breadcrumbs. Mix gently until combined, being careful not to overmix.
- Transfer the mixture into the prepared loaf pan or shape it into a loaf on a sheet pan. Top with marinara sauce.
- Bake uncovered for 45–50 minutes, until the internal temperature reaches 165°F (74°C). Add shredded mozzarella cheese during the last 10 minutes if using, allowing it to melt.
- Let the meatloaf rest for 5–10 minutes before slicing. Garnish with fresh parsley and serve warm.
Notes
Add grated zucchini or spinach for a veggie boost. Squeeze out excess moisture from zucchini before adding.
Swap mozzarella with provolone, cheddar, or a blend of Italian cheeses for varied flavor.
Use dairy-free cheese and milk alternatives for a dairy-free version.
Add red pepper flakes or hot sauce for a spicy kick.
