Description

Garlic Parmesan Chicken Meatloaf is a healthier twist on classic meatloaf, made with lean ground chicken, savory parmesan, and a cheesy kick, topped with marinara and melted mozzarella for a flavorful, guilt-free comfort food.


Ingredients

2 lbs ground chicken

1 cup grated Parmesan cheese

3/4 cup breadcrumbs (gluten-free if needed)

1/2 cup whole milk

2 large eggs

3 cloves garlic, minced

1 small onion, finely chopped

1 tablespoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup marinara sauce, plus more for topping

1 cup shredded mozzarella cheese (optional for topping)

Fresh parsley, chopped (optional garnish)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a loaf pan or line a sheet pan with parchment paper.
  2. In a small bowl, soak breadcrumbs in milk for 2–3 minutes until soft and mushy.
  3. In a large mixing bowl, combine ground chicken, parmesan, eggs, garlic, onion, Italian seasoning, salt, pepper, and soaked breadcrumbs. Mix gently until combined, being careful not to overmix.
  4. Transfer the mixture into the prepared loaf pan or shape it into a loaf on a sheet pan. Top with marinara sauce.
  5. Bake uncovered for 45–50 minutes, until the internal temperature reaches 165°F (74°C). Add shredded mozzarella cheese during the last 10 minutes if using, allowing it to melt.
  6. Let the meatloaf rest for 5–10 minutes before slicing. Garnish with fresh parsley and serve warm.

Notes

Add grated zucchini or spinach for a veggie boost. Squeeze out excess moisture from zucchini before adding.

Swap mozzarella with provolone, cheddar, or a blend of Italian cheeses for varied flavor.

Use dairy-free cheese and milk alternatives for a dairy-free version.
