Ingredients
Skewers:
- 4 lbs Top Sirloin, sliced thinly
- 20 Swiss Cheese Slices
- 1 cup Salt, Pepper, Garlic (SPG) Rub
- 2 tbsp Minced Garlic
- 2 tbsp Chopped Parsley
Caramelized Onions:
- 2 medium White Onions, thinly sliced
- 2 oz Pendleton Bourbon
- Salt & Pepper, to taste
- 2 tbsp Canola Oil
Cheese Crust:
- 2 tbsp Finely Chopped Fried Onions
- 2 tbsp Parmesan, grated
- 1.5 tbsp Melted Butter
Instructions
- Prepare Caramelized Onions: Preheat your grill to medium-high heat (about 350°F) and place a cast iron skillet on the grill 2 minutes before cooking. Heat canola oil in the skillet, then add thinly sliced white onions seasoned with salt and pepper. Cook over medium heat, stirring frequently and adjusting heat as needed to avoid burning, until onions are dark brown and soft, about 45-60 minutes. Add minced garlic and cook for an additional 2 minutes. Deglaze the skillet with Pendleton Bourbon and let simmer until most of the liquid evaporates (2-3 minutes). Remove and keep warm.
- Prepare Steak Layers: Thinly slice the top sirloin and pound each slice to about ⅛ inch thickness. Lay out a base layer of steak measuring approximately 2.5 feet long and 1 foot wide on a flat surface. Cover with Swiss cheese slices, then add a layer of caramelized onions mixed with minced garlic and chopped parsley. Top with another layer of Swiss cheese and finish with a final layer of steak. Use a mallet to pound the layers together gently to help them merge.
- Freeze the Meat Layer: Wrap the layered steak and cheese assembly tightly in foil and place it on a tray in the freezer for at least 1 hour to firm up—4 hours is ideal for best slicing results.
- Prepare Grill & Skewers: Preheat your grill fire to medium heat (about 325°F). Remove the chilled meat stack from the freezer, slice into 2×2 inch cubes, and thread onto small skewers. Season the outside of the skewers generously with the salt, pepper, garlic rub.
- Grill the Skewers: Place skewers on the grill grates and cook slowly for approximately 8-10 minutes per side, until the internal temperature reaches 165°F, keeping the cheese inside melted and gooey. Remove from grill and let rest briefly.
- Apply Cheese Crust and Finish: Mix finely chopped fried onions, grated Parmesan, and melted butter to create the cheese crust. Brulee this mixture on top of the grilled skewers to create a golden, flavorful crust.
