Ingredients
2 lbs beef tenderloin, trimmed
Salt and pepper, to taste
2 tablespoons olive oil
1/2 cup unsalted butter
4 cloves garlic, minced
2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the beef tenderloin dry and season generously with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the beef on all sides until a deep brown crust forms.
- Meanwhile, melt the butter over low heat and stir in garlic, parsley, thyme, rosemary, Worcestershire sauce, and lemon juice if using.
- Cook the butter mixture just until fragrant, then remove from heat.
- Brush half of the garlic butter over the seared tenderloin.
- Transfer the skillet to the oven and roast until desired doneness is reached.
- Remove from the oven and let the beef rest for 10 minutes.
- Slice and finish with the remaining garlic butter sauce before serving.
Notes
Use a meat thermometer for best results.
Letting the beef rest ensures juicy slices.
Dried herbs can be substituted if fresh are unavailable.
