Ingredients

For the Cake:

2 cups fresh or frozen cherries, pitted

For the Streusel Topping:

1/4 cup unsalted butter, cold and cut into small pieces

Optional Glaze:

1/4 cup powdered sugar

12 teaspoons milk


Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease or line a 9-inch round cake pan with parchment paper.

  2. Prepare the cake batter: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the butter, eggs, and vanilla extract until smooth. Gradually add the dry ingredients, alternating with the milk, until the batter is smooth and well combined.

  3. Add the cherries: Gently fold in the cherries (toss them with a little flour if using frozen to prevent them from sinking). Pour the batter into the prepared cake pan and smooth the top.

  4. Make the streusel topping: In a small bowl, combine the flour, sugar, and cold butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Sprinkle the streusel evenly over the top of the cake batter.
