Description

This Giant Cinnamon Roll Cake transforms classic cinnamon rolls into one impressive spiral cake. With fluffy homemade dough, a sweet cinnamon-sugar filling, and drizzled vanilla icing, it’s perfect for brunch, holidays, or a cozy dessert centerpiece.


Ingredients

Dough:

2 3/4 cups (344 g) all-purpose flour, plus more as needed

1/4 cup (50 g) granulated sugar

1 tsp salt

2 1/4 tsp instant yeast (1 packet)

3/4 cup (180 ml) whole milk

1/4 cup (56 g) unsalted butter

1 large egg, room temperature

Filling:

1/4 cup (56 g) unsalted butter, softened

1/4 cup (50 g) brown sugar or granulated sugar

1 tbsp ground cinnamon

Vanilla Icing:

1 cup (120 g) confectioners’ sugar

2 tbsp (30 ml) milk or heavy cream

1 tsp vanilla extract


Instructions

  1. Whisk flour, sugar, salt, and yeast in a bowl.
  2. Heat milk and butter until warm (100–110°F). Stir into dry mixture, then add egg. Mix into a soft dough, adding flour if sticky.
  3. Knead for 5 minutes by hand or mixer until smooth and slightly tacky. Shape into a ball, cover, and rest 30 minutes.
  4. Roll dough into a 15×12-inch rectangle. Spread softened butter over surface, then sprinkle evenly with cinnamon-sugar.
  5. Cut into 6 strips. Roll one strip into a spiral and place in the center of a greased 9-inch cake pan. Coil remaining strips around it to form a large roll.
  6. Cover and let rise 1–2 hours, until doubled.
  7. Bake at 350°F (175°C) for 30–35 minutes, tenting with foil if browning too quickly.
  8. Cool 10 minutes. Whisk icing ingredients and drizzle over the warm cake before serving.

Notes

Swap maple syrup for some milk in the icing for a maple glaze.

Replace milk with brewed coffee for a coffee-flavored icing.

Add chopped pecans, walnuts, or raisins to the filling for extra texture.

Make mini versions in muffin tins for individual spirals.

Freeze baked or unbaked for make-ahead convenience.
