Description

Ginger Molasses Cookies are soft, chewy cookies with crisp edges and a warm spiced flavor from ginger, cinnamon, cloves, and molasses. Perfect for fall and winter baking, they’re cozy, nostalgic, and always a crowd-pleaser.


Ingredients

2 1/4 cups (280g) all-purpose flour

2 tsp ground ginger

1 1/2 tsp ground cinnamon

1/4 tsp ground cloves

1/4 tsp nutmeg (optional)

1 tsp baking soda

1/2 tsp salt

3/4 cup (170g) unsalted butter, softened

1 cup (200g) brown sugar, packed

1 large egg

1/4 cup (60ml) unsulphured molasses

1 tsp vanilla extract

1/4 cup (50g) granulated sugar, for rolling


Instructions

  1. Whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt in a medium bowl.
  2. In a large bowl, cream softened butter with brown sugar using an electric mixer until light and fluffy (2–3 minutes).
  3. Beat in egg, then add molasses and vanilla, mixing until incorporated.
  4. Gradually add dry ingredients on low speed until a soft, sticky dough forms. Do not overmix.
  5. Cover dough with plastic wrap and refrigerate for at least 1 hour, or overnight.
  6. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Scoop 1-tbsp portions of dough, roll into balls, coat in granulated sugar, and place 2 inches apart on baking sheets.
  8. Bake 9–11 minutes, until edges are set but centers look slightly underdone.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Roll dough in coarse sugar for extra crunch.

Dip baked cookies in white chocolate and sprinkle with cinnamon sugar for a festive twist.

Add a pinch of black pepper or cardamom for extra spice.

Replace part of butter with applesauce for a lighter version.

Freeze baked cookies or dough balls for up to 2 months.
