Description

A nostalgic, crispy, and gooey grilled sandwich melt made with whole grain bread, cheddar cheese, and a creamy mayo-mustard spread. Perfect for quick lunches or dinners with a wholesome twist.


Ingredients

4 slices whole grain bread

4 slices cheddar cheese

1/2 cup shredded cooked chicken (or your protein of choice)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons butter, softened

Optional: lettuce and tomato slices for added crunch


Instructions

  1. In a small bowl, mix mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper until smooth.
  2. Spread the sauce on two slices of bread.
  3. Layer two slices of cheddar cheese, shredded chicken, and optional lettuce and tomato slices on one slice of bread.
  4. Top with another slice of cheese and the second slice of bread, sauce side down.
  5. Spread softened butter on the outer sides of the sandwich.
  6. Preheat a non-stick skillet or grill pan over medium heat.
  7. Cook the sandwich for 3–4 minutes per side, pressing gently with a spatula, until golden and the cheese melts.
  8. Remove from heat, rest for a minute, and slice in half before serving.

Notes

Swap chicken for turkey, tuna, or sautéed mushrooms for a vegetarian version.

Add sliced pickles or caramelized onions for extra flavor.

For spice, mix hot sauce or chipotle powder into the mayo spread.

Use Swiss, provolone, or pepper jack cheese for variation.

Reheat leftovers in a skillet to restore crispness—avoid microwaving.
