Ingredients

For the Fritters:

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1 teaspoon granulated sugar

1 teaspoon garlic powder

1 teaspoon Cajun seasoning

1/2 teaspoon salt

1/4 teaspoon pepper

Pinch of cayenne pepper (optional)

1 large egg, beaten

3/4 cup milk

2 1/2 cups corn kernels (fresh, canned, or frozen)

2 green onions, sliced

23 cups vegetable or canola oil (for frying)

For the Sauce:

1/3 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey

1 tablespoon Cajun seasoning


Instructions

  • For the Fritters:

    • Prepare the Batter: In a large bowl, whisk together flour, baking powder, sugar, cheddar cheese, garlic powder, Cajun seasoning, salt, pepper, and cayenne (if using).

    • Mix Wet Ingredients: Add the beaten egg and milk to the dry ingredients and stir until just combined.

    • Add Corn and Green Onions: Fold in the corn kernels and green onions until evenly mixed.

    • Heat the Oil: In a large pot, heat 2-3 cups of oil over medium-high heat. Test oil temperature by dropping a small amount of batter; if it sizzles and turns golden, it’s ready.

    • Fry the Fritters: Drop tablespoonfuls of batter into the hot oil, frying 5-6 fritters at a time for 2 minutes until golden brown. Drain on a wire rack over paper towels.

  • For the Sauce:
