Homemade Zhoug is a vibrant, spicy Middle Eastern herb sauce bursting with the fresh flavors of cilantro, parsley, and jalapeños, perfectly balanced with warm spices and a zesty lemon finish. Fresh Ingredients
- 4 jalapeños, stems removed
- 3 cloves garlic
- 1 cup firmly packed fresh cilantro, leaves and tender stems only
- 0.75 cup firmly packed fresh parsley, leaves and tender stems only
- Juice of 1 lemon (about 2 tablespoons)
- 3 tablespoons water, as needed

- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground cardamom seeds
- 0.5 teaspoon ground coriander
- 1 teaspoon sugar
- 0.5 teaspoon salt

- 0.5 cup olive oil, plus more to drizzle on top
Instructions
- Prepare Jalapeños and Garlic: Cut the stems off the jalapeños. Taste to assess the desired spice level and remove seeds if you prefer less heat. Roughly chop the jalapeños and add them to a food processor along with the garlic cloves. Pulse several times until the mixture is coarsely chopped.
- Add Herbs and Spices: Add the fresh cilantro, parsley, ground cumin, ground cardamom seeds, and ground coriander to the food processor. Pulse again until the ingredients are coarsely chopped, making sure to scrape down the sides of the bowl to evenly incorporate everything.
- Combine Wet Ingredients: Pour in the olive oil, freshly squeezed lemon juice, sugar, and salt. Pulse the mixture briefly until all ingredients are combined but still chunky to maintain texture.
- Adjust Consistency: If the sauce is too thick or stiff, add water one tablespoon at a time (up to three tablespoons) while pulsing gently until the desired consistency is reached.
- Season to Taste: Taste the zhoug and adjust seasoning by adding more salt, sugar, or lemon juice according to your preference.
- Rest and Store: Transfer the zhoug to a container and drizzle a little olive oil on top to seal and preserve freshness. Let it rest at room temperature for 1 hour to allow flavors to meld or refrigerate if not using immediately. Use within a few days for optimum freshness.

- Removing jalapeño seeds reduces heat if you prefer a milder sauce.
