Description

These Hot Bagel Sandwiches with a Breakfast Quiche filling are a fantastic way to spice up your mornings! Combining the warmth of a bagel with a fluffy, cheesy egg filling, these bagels are customizable to your taste with your choice of meats, veggies, and fresh herbs. Perfect for breakfast, brunch, or an easy lunch!

Ingredients

4 large bagels (plain, everything, sesame, or your favorite)

4 large eggs

¼ cup milk or cream

½ cup shredded cheese (cheddar, Swiss, mozzarella, or blend)

½ cup cooked bacon, ham, or sausage (optional)

½ cup sautéed vegetables (spinach, peppers, mushrooms)

Salt and pepper to taste

Fresh herbs like chives or parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Slice the top third off each bagel. Hollow out the centers, leaving enough of the walls intact to hold the filling. You can use the excess bagel pieces for croutons or toast.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cheese, cooked meats, vegetables, and any herbs you’re using. Make sure everything is well-mixed.
  4. Place the hollowed-out bagels on the prepared baking sheet. Carefully spoon the egg mixture into each bagel, filling them just below the rim.
  5. Bake in the preheated oven for 18-22 minutes, or until the eggs are puffed up and fully set. The edges of the bagel should be lightly golden.
  6. Let the stuffed bagels cool slightly before serving. Top with extra herbs, if desired, and enjoy while warm!

Notes

For a vegetarian version, skip the meat and load up on extra veggies like spinach, mushrooms, onions, or bell peppers.

For a spicy twist, add hot sauce, jalapeños, or pepper jack cheese.

For a gourmet version, replace the meat with smoked salmon and fresh dill.

These bagels freeze well—bake, cool, wrap tightly, and freeze for up to 1 month. Reheat in the oven or microwave before serving.
