Ingredients

2 cups all-purpose flour

2 cups granulated sugar

1 cup buttermilk

2 large eggs

1 tsp baking soda

1 tsp vanilla extract

1 tsp salt

1 cup shredded coconut

1 cup crushed pineapple, drained

1 cup chopped pecans or walnuts


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, whisk flour, sugar, baking soda, and salt.
  3. In another bowl, whisk buttermilk, eggs, and vanilla until smooth.
  4. Gently stir wet ingredients into dry ingredients until just combined.
  5. Fold in shredded coconut, crushed pineapple, and chopped nuts.
  6. Pour batter into prepared baking dish and spread evenly.
  7. Bake 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 15 minutes, then transfer to a wire rack to finish cooling.
