Description
The Irish Blackberry Fool is a delightful dessert that combines the sweetness of stewed blackberries with the richness of whipped cream and tangy Greek yogurt. This modern take on a classic dessert is perfect for any occasion, from casual family dinners to more refined gatherings, especially when topped with fresh berries and mint.
Ingredients
3 cups fresh blackberries (plus extra for garnish)
1 tbsp Grand Marnier (optional)
3 tbsp fresh lemon juice
½ cup granulated sugar
1 tsp unflavored gelatin
4 tsp cold water
1¼ cups heavy cream
3 tbsp powdered sugar
1 tsp vanilla bean paste or vanilla extract
1 cup plain Greek yogurt
Fresh mint leaves (for garnish)
Instructions
- Prepare the Blackberry Syrup: In a medium saucepan, combine blackberries, Grand Marnier (if using), lemon juice, and sugar. Bring to a boil over medium heat, then reduce to a simmer and cook for 8–10 minutes until the mixture becomes syrupy and the berries soften. Remove from heat and let it cool completely.
- Prepare the Cream Layer: In a small microwave-safe bowl, stir gelatin with water. Microwave for 15 seconds, stir, and let cool slightly. In a medium bowl, whisk the heavy cream until it starts to thicken (1–2 minutes). Add the cooled gelatin mixture, powdered sugar, and vanilla. Whisk for 2–3 more minutes until soft peaks form.
- Combine the Cream and Yogurt: In a separate bowl, gently fold the whipped cream into the Greek yogurt until fully combined.
- Assemble the Fool: In small glass jars or dessert bowls (about ¾–1 cup in size), layer the blackberry syrup and cream mixture. Repeat to create beautiful swirls or layers.
- Garnish and Chill: Top with fresh blackberries and mint leaves for garnish. Chill for a few hours before serving to allow the flavors to meld and achieve the best texture.
Notes
Fruit Swap: While blackberries are traditional, feel free to swap them with raspberries, strawberries, or blueberries for a different twist.
Non-Alcoholic Version: Omit the Grand Marnier if you prefer a non-alcoholic version of the syrup.
Dairy-Free Version: Use a dairy-free cream alternative and plant-based yogurt to make this dessert dairy-free.
Storage: Store in an airtight container in the fridge for up to 2-3 days.
Freezing: Freezing is not recommended as it may affect the texture of the cream and the syrup.
Gluten-Free: This dessert is naturally gluten-free.
