Ingredients

1 tablespoon baking powder

1 tablespoon sugar

1 teaspoon salt

1 ¾ cups (415ml) buttermilk

½ cup (115g) unsalted butter, melted (for the pan)

½ lb (225g) ground breakfast sausage (mild or spicy)

1 ½ cups (150g) shredded cheddar cheese (or a cheese blend)

Optional: ½ teaspoon black pepper or paprika for extra flavor

Instructions

  1. Preheat and Prep: Preheat the oven to 450°F (232°C). Place the butter in the baking dish and put it in the oven to melt while the oven preheats.
  2. Cook the Sausage: Cook the sausage in a skillet over medium heat, breaking it into crumbles and cooking until browned. Drain any excess grease and set aside to cool slightly.
  3. Make the Dough: In a large bowl, whisk together the flour, baking powder, sugar, and salt. Add the buttermilk and stir until just combined. Gently fold in the sausage and cheese. The dough will be thick and sticky.
  4. Assemble and Bake: Remove the baking dish with melted butter from the oven. Spoon or spread the dough evenly into the hot butter, pressing it to the edges. Lightly score the dough into 9 squares. Bake for 20-25 minutes, until golden brown.
