Description

A rich and comforting creamy turkey and wild rice soup made with tender shredded turkey, nutty wild rice, and a smooth, velvety broth. This hearty soup is perfect for cozy dinners and a delicious way to use leftover turkey.

Ingredients

2 cups cooked turkey, shredded

1 cup wild rice, uncooked

4 cups chicken broth

1 cup heavy cream

1 onion, diced

2 carrots, chopped

2 celery stalks, chopped

2 cloves garlic, minced

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

2 tbsp butter

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic, and cook until softened and fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the wild rice, reduce heat, and simmer until the rice is tender.
  5. Stir in the shredded turkey, heavy cream, thyme, salt, and black pepper.
  6. Simmer gently until heated through and creamy.
  7. Serve hot.

Notes

Wild rice takes longer to cook than regular rice, so allow enough simmering time.

Use half-and-half for a lighter version.

Add mushrooms or spinach for extra flavor and nutrition.

Stir gently when reheating to keep the soup creamy.
