Instructions
- Preheat oven and prepare dish: Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with cooking spray to prevent sticking.
- Mix egg ingredients: In a large bowl, combine the beaten eggs, ½ cup of the Mexican blend cheese, heavy cream, salt, and black pepper. Stir well until fully blended to ensure consistent flavor and texture.
- Assemble casserole: Pour the egg mixture into the prepared baking dish. Scatter the cubed cream cheese evenly across the surface to create rich, creamy pockets throughout the casserole.
- Add toppings: Sprinkle the diced jalapenos and most of the cooked diced smoked beef sausage evenly over the egg mixture in the dish.
- Bake initial layer: Bake the casserole for about 30 minutes. This allows the eggs to begin setting and flavors to meld.
