Description

Juneteenth Collard Greens are a flavorful Southern dish packed with savory goodness. Tender collard greens are simmered with aromatic spices, creating a rich, comforting side dish that’s perfect for festive gatherings or family meals.

Ingredients

1 bunch fresh collard greens (about 1 lb)

1 medium onion, chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

¼ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

Instructions

  1. Rinse the collard greens under cold water, remove tough stems, and chop the leaves into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute.
  4. Pour in the chicken broth and bring to a gentle boil over high heat. Reduce the heat to low once boiling.
  5. Stir in the chopped collard greens, cover, and simmer for about 30 minutes until the greens are tender but still slightly crisp.
  6. Season with salt, pepper, and cayenne pepper before serving.

Notes

Vegetarian Version: Use vegetable broth instead of chicken broth for a vegetarian option.

Spicy Kick: Add a diced jalapeño or more cayenne pepper for extra heat.

Sweet Touch: Add a teaspoon of sugar or honey to balance the savory flavors.

Different Greens: Mix collard greens with mustard greens for a unique flavor combination.

Extra Veggies: Add bell peppers, carrots, or turnip greens for more variety.
