Description
Juneteenth Collard Greens are a flavorful Southern dish packed with savory goodness. Tender collard greens are simmered with aromatic spices, creating a rich, comforting side dish that’s perfect for festive gatherings or family meals.
Ingredients
1 bunch fresh collard greens (about 1 lb)
1 medium onion, chopped
3 cloves garlic, minced
4 cups low-sodium chicken broth
¼ tsp cayenne pepper (adjust to taste)
Salt and pepper to taste
2 tbsp olive oil
Instructions
- Rinse the collard greens under cold water, remove tough stems, and chop the leaves into bite-sized pieces.
- In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute.
- Pour in the chicken broth and bring to a gentle boil over high heat. Reduce the heat to low once boiling.
- Stir in the chopped collard greens, cover, and simmer for about 30 minutes until the greens are tender but still slightly crisp.
- Season with salt, pepper, and cayenne pepper before serving.
Notes
Vegetarian Version: Use vegetable broth instead of chicken broth for a vegetarian option.
Spicy Kick: Add a diced jalapeño or more cayenne pepper for extra heat.
Sweet Touch: Add a teaspoon of sugar or honey to balance the savory flavors.
Different Greens: Mix collard greens with mustard greens for a unique flavor combination.
Extra Veggies: Add bell peppers, carrots, or turnip greens for more variety.
