Keto Turtle Biscotti is a crunchy, chocolatey low-carb cookie dipped in sugar-free chocolate, topped with pecans, and drizzled with caramel. It’s a decadent keto-friendly treat perfect for dunking in coffee or enjoying as a dessert.
Ingredients
Chocolate Biscotti:
1 3/4 cups (175 g) almond flour
1/3 cup (61 g) Swerve Granular
1/4 cup (22 g) cocoa powder
1 tsp baking powder
1/4 tsp salt
1 large egg
1/4 cup (57 g) butter, melted
1/2 tsp vanilla extract
Toppings:
1 1/2 oz (43 g) sugar-free dark chocolate chips
3 tbsp finely chopped pecans
1/2 recipe sugar-free caramel sauce
Instructions
- Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- Whisk almond flour, sweetener, cocoa powder, baking powder, and salt in a bowl. Stir in egg, melted butter, and vanilla until dough forms.
- Shape dough into a 10×4-inch log. Bake for 25–30 minutes until firm. Let cool 20 minutes. Reduce oven to 200°F (95°C).
- Slice log into ~15 pieces using a sharp knife. Lay slices flat, cut side up. Bake 30 minutes, then turn off oven and let biscotti cool inside until crisp.
- Melt chocolate over simmering water. Spread chocolate on one side of each biscotto and sprinkle pecans on top. Drizzle with caramel. Let set for 30 minutes or refrigerate to speed up.
Notes
Swap pecans for walnuts or almonds for variety.
Add espresso powder to the dough for deeper chocolate flavor.
Drizzle with sugar-free white chocolate for a festive look.
For a chewier texture, shorten the second bake.
Best stored in an airtight container at room temperature for up to 1 week or frozen for longer.
