Description

King Ranch Chicken Casserole is a classic comfort-food dinner made with layers of tender chicken, tortillas, and a creamy, cheesy sauce that bakes until bubbly and golden.


Ingredients

1 tbsp olive oil

1 medium onion, diced

1 medium red bell pepper, diced

10.75 oz condensed cream of mushroom soup

10.75 oz condensed cream of chicken soup

14.5 oz diced tomatoes, canned

2/3 cup low-sodium chicken broth

4 oz canned green chilies

1 tbsp chili powder

1 tsp garlic powder

3 cups cooked chicken, shredded

3 cups cheddar cheese, shredded

10 medium tortillas (corn or flour), 4 cut in half

1 tbsp chopped chives, for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium-high heat. Add diced onion and red bell pepper and cook until softened and translucent.
  3. Transfer the cooked vegetables to a large bowl and stir in cream of mushroom soup, cream of chicken soup, diced tomatoes, chicken broth, green chilies, chili powder, and garlic powder until smooth.
  4. Spread about 1/2 cup of sauce over the bottom of a greased 9×13-inch baking dish.
  5. Layer half of the shredded chicken over the sauce, then pour 2 cups of sauce on top.
  6. Sprinkle with 1 cup of shredded cheese and add half of the tortillas.
  7. Repeat layers with remaining chicken, another 2 cups of sauce, 1 cup of cheese, and remaining tortillas.
  8. Spread the remaining sauce evenly over the top and finish with the last cup of cheese.
  9. Bake uncovered for 30–35 minutes, until bubbly and lightly browned.
  10. Remove from the oven, garnish with chopped chives, and serve hot.

Notes

Rotisserie chicken works well for quick preparation.

Adjust spice level with extra chili powder or cayenne.

Cover loosely with foil if the top browns too quickly.

Let rest for a few minutes before serving for cleaner slices.
