Description

This fresh kiwi citrus dressing is tangy, sweet, and incredibly easy to make. Blended in just 20 seconds, it’s perfect for summer salads, grilled chicken, or even as a zesty marinade. Made with ripe kiwis, citrus juice, honey, and mint, it’s both refreshing and vibrant.


Ingredients

3 ripe kiwis – peeled and chopped

1/2 cup orange juice

3 Tbsp olive oil

2 Tbsp honey

2 Tbsp fresh mint

1 Tbsp lime juice

1 Tbsp white vinegar

Pinch of salt


Instructions

  1. Add all ingredients to a blender: kiwis, orange juice, olive oil, honey, mint, lime juice, vinegar, and salt.
  2. Blend for 20 seconds or until smooth. Scrape down the sides and blend again if needed.
  3. Let sit for 15 minutes before serving to allow flavors to meld.
  4. Store in the refrigerator for up to 1 week. Shake well before using as ingredients may separate.

Notes

Use ripe kiwis for the best flavor and sweetness.

This dressing also works great as a marinade for chicken.

Lemon juice can be used instead of lime juice if preferred.
