Description

These Lazy Girl Pecan Pie Bars deliver all the gooey, buttery sweetness of traditional pecan pie in an easy bar form. With a tender shortbread crust and a rich caramel-pecan filling, they’re the perfect no-fuss dessert for holidays or anytime cravings.


Ingredients

For the Crust:

1 ½ cups all-purpose flour

½ cup unsalted butter, softened

¼ cup granulated sugar

¼ tsp salt

For the Pecan Filling:

2 large eggs

1 cup light brown sugar, packed

¼ cup unsalted butter, melted

¼ cup light or dark corn syrup

1 tsp vanilla extract

1 ½ cups pecan halves or chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. Prepare the crust: In a bowl, mix softened butter, sugar, flour, and salt until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared baking dish.
  3. Bake crust for 15 minutes, or until lightly golden. Remove from oven and set aside.
  4. Prepare the filling: In a medium bowl, whisk together eggs, brown sugar, melted butter, corn syrup, and vanilla extract until smooth. Fold in pecans until well coated.
  5. Pour the pecan mixture evenly over the pre-baked crust, spreading it to cover the surface.
  6. Bake for 25–30 minutes, or until the filling is set and slightly bubbly around the edges.
  7. Allow the bars to cool completely in the pan before lifting out with parchment and cutting into squares or rectangles.

Notes

Use dark corn syrup for a deeper, caramel flavor.

Add a splash of bourbon or rum for a boozy twist.

Sprinkle chocolate chips over the crust before adding filling for a chocolate version.

Use gluten-free flour for a gluten-free alternative.
