Ingredients

Instructions
- In a medium saucepan, combine the cream and sugar. Bring to a gentle boil over medium heat, stirring frequently until the sugar is fully dissolved (about 3–5 minutes).
- Remove the pan from the heat. Stir in the lemon juice and zest (if using). The cream will begin to thicken slightly as the lemon reacts with it.
- Strain the mixture through a fine-mesh sieve to ensure a smooth texture. Pour into individual serving glasses or ramekins.
- Refrigerate uncovered for at least 2 hours, or until set. The posset should have a gently wobbly texture, similar to silky pudding.
- Before serving, top each posset with fresh berries and garnish with mint leaves or powdered sugar.
