Ingredients
1 tablespoon olive oil
1 large onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon red pepper flakes (optional)
1 cup brown or green lentils, rinsed
6 cups vegetable broth (or chicken broth)
1 (14.5 ounce) can diced tomatoes, undrained
1 pound Yukon Gold potatoes, peeled and cubed
1 bay leaf
Salt and freshly ground black pepper to taste
2 tablespoons lemon juice
Fresh parsley, chopped, for garnish
Optional toppings: crusty bread, sour cream, yogurt
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery, cooking for 5-7 minutes until softened. Add garlic, thyme, rosemary, and red pepper flakes (if using), cooking for another minute until fragrant.
- Add the rinsed lentils to the pot, stirring to coat them in the vegetables and spices. Pour in vegetable broth and add the diced tomatoes with juices. Stir to combine. Add cubed potatoes and bay leaf, ensuring the ingredients are submerged in the broth. Bring the soup to a boil, then reduce the heat to low, covering and simmering for 20-25 minutes, or until the lentils and potatoes are tender.
- Remove the bay leaf. Season the soup with salt and pepper to taste, then stir in the lemon juice for added brightness.
- If you prefer a smoother soup, use an immersion blender to partially blend the soup or transfer a portion to a blender, then return it to the pot.
- Ladle the soup into bowls, garnish with fresh parsley, and serve with optional toppings like crusty bread, sour cream, or yogurt.
