Ingredients

Egg Mixture

  • 2 cartons Burnbrae Farms Egg Creations Whole Eggs Veggie & Feta, 500g each

Vegetables

  • 1 small red onion, chopped
  • 2 zucchini, chopped
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 tomatoes, seeded and diced

Additional Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 tsp fresh thyme
  • 1 tbsp fresh basil, chopped
  • ½ cup black olives, sliced
  • 1 cup feta cheese, crumbled
  • ½ tsp salt
  • ¼ tsp pepper


Instructions

  1. Preheat and prepare dish: Preheat oven to 375°F (190°C). Spray a 9 x 13 inch casserole dish with cooking spray to prevent sticking.
  2. Sauté vegetables: Heat olive oil in a skillet over medium-high heat. Add chopped red onion, zucchini, red pepper, and green pepper. Sauté the mixture for 5 to 7 minutes or until the vegetables become softened and fragrant.
  3. Spread vegetables: Transfer the sautéed vegetables evenly into the greased casserole dish, creating a base layer.
  4. Add egg mixture and toppings: Pour both cartons of Egg Creations Whole Eggs Veggie & Feta evenly over the vegetables in the casserole dish. Sprinkle fresh thyme, chopped basil, diced tomatoes, sliced black olives, crumbled feta cheese, salt, and pepper over the top for vibrant flavor.
  5. Bake: Place the casserole dish in the preheated oven and bake for 35 minutes, or until the egg mixture is set and the top is lightly golden.
