Description

A hearty Mexican-inspired casserole layered with tortilla strips, seasoned beef, beans, corn, sour cream, and melted cheese. Baked until bubbly and golden, it’s a family-friendly comfort dish perfect for weeknights or gatherings.


Ingredients

1 pound ground beef

1 small onion, diced

2 garlic cloves, minced

1 packet taco seasoning

1/4 cup water

1 can (10 oz) enchilada sauce

1/2 cup sour cream

6 small flour tortillas, cut into strips

1 1/2 cups shredded Mexican blend cheese

1 can (15 oz) black beans, rinsed and drained

1 cup frozen corn

1/4 cup chopped green onions

Fresh cilantro, for garnish (optional)

Nonstick spray


Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess grease.
  3. Add garlic and taco seasoning, then stir in water. Simmer 5 minutes.
  4. Mix in black beans, corn, and enchilada sauce. Simmer 3–5 minutes. Remove from heat and stir in sour cream.
  5. Layer half the tortilla strips in the baking dish. Top with half the beef mixture and half the cheese.
  6. Repeat with remaining tortilla strips, beef mixture, and cheese.
  7. Bake uncovered for 20–25 minutes until cheese is golden and bubbly.
  8. Let rest 5 minutes before topping with green onions and cilantro. Serve warm.

Notes

Swap flour tortillas with corn tortillas for a more authentic texture.

For extra spice, add jalapeños or cayenne to the beef mixture.

Make it lighter with ground turkey or chicken instead of beef.

Add bell peppers, zucchini, or mushrooms for more veggies.

Freeze leftovers for up to 2 months and reheat covered with foil.
