Ingredients

1 lb cooked chicken breast, shredded

1 tablespoon olive oil

1 small red bell pepper, finely chopped

1 small green bell pepper, finely chopped

1 small onion, finely chopped

1 tablespoon fajita seasoning

1 cup shredded cheddar cheese

1 can (8 oz) refrigerated crescent roll dough

1/4 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Salsa (for serving, optional)


Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the Filling: Heat olive oil in a skillet over medium heat. Add red and green bell peppers and onions. Sauté for about 5 minutes or until softened.
  3. Add Chicken and Seasoning: Stir in shredded chicken and fajita seasoning. Cook for another 3-4 minutes. Remove from heat and let cool slightly.
  4. Roll the Crescents: Unroll the crescent roll dough and separate into triangles. Place 1-2 tablespoons of chicken fajita mixture on the wider end of each triangle. Sprinkle with shredded cheddar cheese.
  5. Shape the Rolls: Roll the crescent dough from the wide end, pinching the edges to seal. Place rolls on the prepared baking sheet.
  6. Bake: Bake for 12-15 minutes, or until golden brown and flaky.
