Cupcakes
- 2 1/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 1/4 cups milk
- 3 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup crushed chocolate eggs (Cadbury mini eggs or similar), plus extra whole mini eggs for decorating
Buttercream
- 1 cup unsalted butter, softened
- 5 cups icing sugar
- 2 to 3 teaspoons milk or heavy cream
- 2 teaspoons vanilla extract
- Green food coloring
- 1/4 cup cocoa powder
Instructions
- Preheat and prepare: Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners to prevent sticking and aid in easy removal.
- Mix cupcake batter: Using an electric mixer, beat all the cupcake ingredients (flour, sugar, butter, milk, baking powder, salt, vanilla extract, eggs, and crushed chocolate eggs) on low speed for 30 seconds, scraping down the bowl as needed. Then increase to medium speed and mix for 1 minute until fully combined and smooth.
- Bake the cupcakes: Spoon the batter into the cupcake liners, filling each about 3/4 full. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely on a cooling rack before frosting.
- Prepare the buttercream: While cupcakes cool, prepare the icing by mixing the unsalted butter, icing sugar, 2 to 3 teaspoons of milk or cream, and vanilla extract until smooth and creamy. Adjust milk quantity to achieve desired consistency.
- Color the buttercream: Divide the buttercream into two bowls. Add green food coloring to one portion to create the grassy effect and mix cocoa powder into the other portion for the nest color.
- Decorate the cupcakes: Transfer each colored buttercream into separate piping bags fitted with your preferred decorating tips. Pipe the green buttercream on the base of each cupcake to mimic grass, then pipe the chocolate buttercream on top to form a nest. Finish by placing 3 or 4 whole mini eggs on top of each nest.
