Description

Mint Fudge Stuffed Brownies combine a rich, dense chocolate brownie base with a smooth, creamy mint fudge center, creating a decadent and refreshing dessert that is perfect for holidays, gatherings, or anytime you want an impressive treat. The layered presentation and fudgy texture make these brownies stand out, offering a delicious balance of deep chocolate flavor and cool mint.

Ingredients

For the Brownie Base:

  • 1/2 cup unsalted butter
  • 8 oz semi-sweet chocolate chips or chopped chocolate
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt

For the Mint Fudge Layer:

  • 1 (14 oz) can sweetened condensed milk
  • 2 cups white chocolate chips
  • 1 teaspoon peppermint extract
  • 2-3 drops green food coloring (optional)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving an overhang to easily lift the brownies out later.
  2. Make Brownie Base: Melt the butter and semi-sweet chocolate together in a microwave-safe bowl by heating in 30-second intervals, stirring in between until smooth. Whisk in the granulated sugar, then beat in the eggs one at a time. Stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, mix the flour, cocoa powder, and salt. Gently fold the dry ingredients into the chocolate mixture until just combined without overmixing.
  4. Layer Brownie Batter: Pour half of the brownie batter into the prepared pan, spreading it evenly. Reserve the remaining batter for later.
  5. Prepare Mint Fudge Layer: Place the sweetened condensed milk and white chocolate chips in a medium saucepan over low heat. Stir constantly until the chocolate completely melts and the mixture is smooth. Remove from heat and stir in peppermint extract. Add green food coloring drop by drop until desired color is reached, if using.
  6. Assemble Layers: Pour the mint fudge mixture evenly over the brownie base in the pan. Drop spoonfuls of the remaining brownie batter on top, then gently spread or swirl to create a marbled effect.
  7. Bake: Bake for 35–40 minutes, or until a toothpick inserted into the brownie portion comes out with a few moist crumbs but no wet batter.
  8. Cool and Slice: Allow the brownies to cool completely in the pan before lifting out using the parchment overhang. Slice into 16 squares and serve.

Notes

  • Substitute mint extract for peppermint extract for a milder mint flavor.
  • Add crushed peppermint candies into the fudge layer for extra texture and flavor.
  • Mix mini chocolate chips into the brownie batter for more chocolatey goodness.
  • Sprinkle crushed candy canes on top before brownies set for a festive touch.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate up to 5 days.
  • Refrigerate brownies for 30 minutes before slicing for cleaner cuts.
  • Microwave for 10 seconds to enhance fudginess if desired before serving.
  • Freeze in airtight container for up to 2 months; thaw overnight in refrigerator.
  • Use a sharp knife wiped clean between cuts for neat slices.
  • Optional: mix chopped walnuts or pecans into brownie batter for added crunch.
